Root Source Challenge #2: pineapple

If this is your first time to hear about the Root Source Challenge, read Claire’s announcement to get caught up. We’ve been getting lots of submissions for the first challenge on flat-leaf parsley. You have until next Tuesday, February 19, 12pm EST to get us your recipe(s).

The subject of Root Source Challenge #2 is pineapple. The person who submits the featured recipe will receive a copy of Nancie McDermott’s Quick & Easy Vietnamese: 75 Everyday Recipes (Chronicle Books). You have until Tuesday, February 26, at 12pm EST to email at rootsourcechallenge [AT] cookthink [DOT] com with a link to (or a copy of) your best pineapple recipe.

Pineapple Tuna Salad

¼ c applesauce, plain
2 tb mayonnaise
1/2 c unsweetened crushed pineapple drained
½ c chopped celery
½ c chopped green or red pepper
¼ c chopped shallots with greens
Salt to taste
Pepper to taste

2 cans of tuna packed in oil or water as preferred

Mix all together and add to tuna, then make a salad plate or sandwich
